OC FAIR - No Classes

Chef Stéphane Tréand will be part of the OC Fair this year! He will be in the Culinary Arts Department: showcasing demos and taste sessions on the main stage, along with a booth for everyone to come and try a M.O.F. Chef's finest delights throughout the fair.

Culinary Arts Stage
The 30-minute culinary demonstrations are always new and exciting, educational and FREE. For the inside scoop on everything culinary, stop by the information desk. The stage schedule changes daily and is subject to change without notice.

The Pâtisserie by Chef Stéphane Tréand (Exhibit Booth)
The Pâtisserie showcases the many talents of Chef Stéphane Tréand, World Champion Pastry Chef, Chocolatier, and MOF (come to the Pâtisserie to learn what an honor this is). Enjoy delicious baked goods, chocolate bonbons, gelato macaron sandwiches, chocolate orange tarts and other pâtisserie delights.

There will be no classes taught at The Pastry School during this time.

About The Class

This summer, for 2 days only, learn what it takes to make and create your own ice cream and frozen dessert collection! Cold components are covered in depth. Using the most modern, professional equipment from traditional scratch process to heat process oriented two-tank ice cream and sorbet machines. Core concepts of how to work with and present cold components, frozen desserts, sorbets, and parfaits. An essential part of modern pastry chef's arsenal, this class will provide key concepts and experience that will compliment any student's pastry skills.

Students will become well-versed with the equipment of the baker, develop respect for quality ingredients, and the details of mixing, fermentation, lamination, shaping, proofing, and preparation for the over. This class will provide students with a well-rounded introduction to laminated doughs, breads, and traditional American quick breads, as well as: Croissants, Chocolate Croissants, Caramel Braid, Kouing-Amann, Bread, Baguettes, Pain au Lait, Brioche, Brioche Nanterre, Raisin Rolls, Puff Pastry, Apple Turnovers, Palmiers...
